Coconut Rice
Coconut Rice
Adapted from a recipe found in Coastal Living and a very similar recipe torn from the page of an old, unknown, magazine.
Ingredients
- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 1 teaspoon grated fresh ginger
- 1 garlic clove minced
- 1 1/4 cups basmati rice
- 1 can can light coconut milk (15 ounce can)
- 3/4 cup chicken broth
- 1 stick cinnamon (about 3-inches)
- 1-2 green chilies optional, minced
- 2 teaspoons garam masala optional
- 1/2 teaspoon salt
- 1 tablespoon fresh lime juice
- green onions optional garnish, sliced diagonally
- fresh mint and cilantro leaves optional garnish, chopped
Instructions
- Heat oil in a medium saucepan over medium heat.
- Add onion; cook 3 minutes, stirring frequently.
- Add ginger and garlic; cook 30 seconds, stirring constantly.
- Add rice; cook 1 minute, stirring constantly.
- Stir in coconut milk, broth, cinnamon stick, salt.
- Add green chilies and garam masala (optional)
- Bring to a boil. Cover and simmer 18 minutes or until liquid is absorbed and rice is tender. Remove from heat; let stand 5 minutes.
- Drizzle with lime juice, and fluff with a fork.
- Garnish with either green onions or a mixture of chopped mint and cilantro.
