Coconut Rice

Adapted from a recipe found in Coastal Living and a very similar recipe torn from the page of an old, unknown, magazine.

Ingredients
  

  • 1 tablespoon olive oil
  • 1/4 cup finely chopped onion
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove minced
  • 1 1/4 cups basmati rice
  • 1 can can light coconut milk (15 ounce can)
  • 3/4 cup chicken broth
  • 1 stick cinnamon (about 3-inches)
  • 1-2 green chilies optional, minced
  • 2 teaspoons garam masala optional
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lime juice
  • green onions optional garnish, sliced diagonally
  • fresh mint and cilantro leaves optional garnish, chopped

Instructions
 

  • Heat oil in a medium saucepan over medium heat.
  • Add onion; cook 3 minutes, stirring frequently.
  • Add ginger and garlic; cook 30 seconds, stirring constantly.
  • Add rice; cook 1 minute, stirring constantly.
  • Stir in coconut milk, broth, cinnamon stick, salt.
  • Add green chilies and garam masala (optional)
  • Bring to a boil. Cover and simmer 18 minutes or until liquid is absorbed and rice is tender. Remove from heat; let stand 5 minutes.
  • Drizzle with lime juice, and fluff with a fork.
  • Garnish with either green onions or a mixture of chopped mint and cilantro.
